Busy, busy, busy

Hadn't realized it's been so long since I shared with y'all.  We've been busy around here with several catering jobs, pick up jobs and more.

Yeah, that's a lot of chicken.  
We did pick up orders for July 4th.  We had two refrigerators that looked like this on the 3rd.  
I gave Timm this light up sign for Father's Day. 
One group enjoyed some delicious rib eyes for their event.  
We thank you all for the support!  Who knows, maybe someday this will be our full time career.

Catering Eagle Scout Court of Honor

We invested many years into the Scouting program with our own boys and their friends.  I still believe it is one of the best character building programs for boys there is.  We had the honor of catering Adam's Court of Honor, and even though he isn't our Boy Scout we feel like he is one of our own.

Not only is Adam a fine young man, high school marching band member, and Eagle Scout...he's also a growing competition BBQ pit master!



We know how boys love to eat, so we prepared for that fact when planning for this one.  No one went hungry and we saw some very full plates leaving the kitchen...seconds for many, and even thirds for some.














There's nothing better than seeing a room full of people enjoy the food you prepared for them.
Congratulations Adam!   We're proud of you!  See you on the BBQ trail.

Catering for our troops

It's spring in the southwest...that means the weather is great and folks are enjoying their time outside.  For us, that means a busy BBQ time.  We've been blessed with quite a few catering jobs over the last couple of months but the one that really stands out is cooking for the 820th Red Horse Squadron at Nellis AFB.  
We catered their spring family event in March for 350 people.  When hearing back from them they said they loved it, got rave reviews and even heard we won over a few Texans with our brisket.  That is a huge compliment in itself. 
This month, we were honored to hear from them to cater their homecoming celebration for the troops coming home from Afghanistan.  This is such an honor for us to provide the food for an important event for them.  
Timm and I (Crystal) both grew up close to Nellis AFB and have great respect for all the armed forces but the Air Force is dear to us and the Airmen that work in all aspects to protect our country. 
We heard back again...they loved and devoured the food.  That means so much to us!

Martin Harris Company Picnic 2013

We had the honor of cooking for the Martin Harris picnic this year. In January, we catered lunch for one of the jobsites and they loved it.  We were asked to cook for the entire company...what an honor! Original numbers were +/300 but quickly grew to almost 500.  That's a whole lotta hungry bellies!

We served up freshly made Coleslaw, Trailhound Beans, Pulled Pork Sandwiches, and Beef Brisket.  We also cooked up Nathan's all beef hot dogs and chips. 
We cooked 22 pork butts,
16 beef briskets,
80 pounds of homemade coleslaw, 
about 300 hotdogs
and lots of beans.
We called in the troops (family) to help us.  We can't thank them enough for all their help.  Mom, Dad, Nelson and Donny, along with Chris, Scott, and Christy all came out to lend a hand and did an amazing job!  We're getting great feedback from many. 
Thank you for letting us spread our wings and feed a great crowd of folks.  We are truly blessed to have had the opportunity.

National Barbecue Month

Time has been flying this year faster than ever.  Well, now its May 1st and you know what that means...yup, you guessed it.  May is National Barbecue Month!  Let me hear you shout it to the heavens, it's okay to give a cheer.  
We're kicking off May with a bang.  The first weekend of the month we're cooking for Martin Harris' company barbecue.  It's our biggest cook ever and we're calling in the troops (family) to help out on this one.  I need to get a practice cook in on chicken for sure because the last weekend in May is the Best Dam BBQ Challenge in Boulder City and I definitely want to finish better than I did last year.
  
We were referred by a friend to cook for a graduation party mid month.  Working with them right now to meet their needs. 

On the competition front, things are a little slow.  Some of the contests we wanted to participate in this year have been cancelled or changed dates and we are already booked on the new weekends.   On a good note, several have been added in the last few weeks and looks like we'll be able to go to some of them.  After our monster cook this weekend I'll get a schedule updated.  In the meantime, get out there and create some of good smelling smoke and fire on the pit or grill!

Lunch for 165 please

Last month, we were asked to cook for one of the job site crews for Martin Harris.  It was an honor we gladly accepted.  First of all, Timm has worked for Martin Harris for more than 35 years, and the job site really needed a moral booster.
We smoked up some awesome 'que of 8 pork butts for sandwiches, and 5 briskets along with yummy beans and some coleslaw, cookies for dessert along with sodas and water to wet their whistles.  Two tables lines were set up and with a few extra co-workers we had all 165 workers through the lines and eating in 25 minutes.  Many came through for seconds and all were pleased and happy.  We couldn't have asked for a more beautiful day for the event. Mission accomplished.  We look forward to having this opportunity again in the future.
